Mom, where's my cupcake?

Well, the big birthday passed without too much hoopla. Acacia and I celebrated by going to the mall (her idea). I did let her climb around the mall play area while I tried to snap some quick action shots. They didn't turn out well, sorry. I remember wondering (before the muffin arrived) why people would take pictures of their cuties at the mall play area. Why not outside, or at home, or even at a studio... but the mall play area?! But then, there I was... "Acacia, honey, look here...smile...ahhhcaaashaaaaaa.....nunununu....smile honey!"

We are having a very small neighborhood barbeque on Saturday to celebrate Acacia's first year and, more importantly, the fact that Braj and I survived! We may have gone through a total identity crisis, but we did survive. Boy, those first few months were something.

On the menu is kosher hot dogs and hamburgers, homemade soft pretzels, mint limeade, and yes... my little muffin gets her cupcake. I wanted to make something that wouldn't send her into sugar convulsions at the party, so I found this recipe:

Pumpkin Apple Harvest Cake
1c pumpkin
2 eggs (beaten)
3/4 c sucanat (what we use instead of refined sugar... don't get me started)
1 c flour (fresh ground soft white...yes, we grind our own)
2 tsp cinnamon
1 tsp baking powder
1 tsp ground ginger
1/2 tsp salt
1/2 c chopped apples (chop 'em small so baby doesn't choke)
1/2 c chopped pecans or walnuts (ditto)

Combine pumpkin, eggs, and sucanat. Combine flour through salt and add to pumpkin mix. Add apples and pecans and mix all together. Pour into greased 8 inch cake pan (or used lined muffin tin). Bake cake at 325 for 35 minutes, or until toothpick comes out clean. Bake cupcakes at 350, about 25 minutes... do toothpick test.

For a topping, I'm whipping up organic cream with mild, sage honey and a teensy drip of vanilla. Num, num, num.
