acacia's first homemade cookie

So I have this incredible ranger cookie recipe that I have to share with you, but first a picture.
Yesterday, Acacia and I sat at the table together and indulged in a still-warm, just-out-of-the-oven, made-from-scratch cookie. Of course she had milk with hers... you should have seen her expression when she blew bubbles in the straw and the milk foamed up. Priceless.

Real Ranger Cookies

1 cup butter
1 cup sucanat (molasses granuels)
1 cup sucanat with honey or unrefined sugar ("turbinado" at our stores)
2 eggs
1 tsp vanilla
1/2 cup ground flax seeds
2 1/2 cups fresh ground soft wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups rolled oats
1 cup shredded coconut
1 cup chopped nuts (walnuts or pecans)
1 1/2 cups chocolate chips

Preheat oven to 350. Cream butter sucanat and sucanat with honey until creamy. Add eggs and vanilla; beat well. Combine flax meal, flour, baking soda, baking powder and salt. Add to butter mixture; mix well. Stir in oats, coconut, nuts, and chocolate chips; mix well. Drop dough by heaping spoonfuls onto ungreased cookie sheet (I use parchment paper). Bake 10-12 minutes or until light golden brown. Cool one minute before removing from cookie sheet.
