friday night! pizza night!

Our weekly menu plan includes homemade pizza every Friday night.  Acacia is usually my pizza dough helper, but this Friday we let Jackson in on the action, too.

Here's the easiest pizza dough in the world.  It makes two medium sized pies.  You can do this.

Super Easy Pizza Dough
4 tsp instant yeast
dollop of honey
1.5 cups warm water
 ~mix and let sit until bubbly.  2 minutes or so.  Then add~
 1 tsp salt
3.5-4 cups flour (we use fresh ground whole grain soft white.  You can use whatever you have on hand, but I'd suggest using at least some whole wheat.)
~knead until mostly smooth, not too stiff~
~oil your hands and the cookie sheet and spread using your fingers~
~top with sauce, cheese, and anything else in your fridge.  Our almost always has arugula, yum!~
~bake at 500 degrees for 10-12 minutes.

That's it.  No need (knead- bahaha!) to let it rise.  Easy as pie!  bahahaha.  Sorry.

I've been reluctant to try this because David is so anti-whole wheat anything (because he's afraid it will taste bad) and because Freshetta pizzas are $5 at walmart, and the boys love those.

David is out of town this week, and Dylan LOVES to help me cook, so I think we'll be makin' pizza on Tuesday.
